Heather joined the Beacon team in August and she brings over 14 years of experience in the financial services industry. She works with individuals and families to provide comprehensive wealth management services designed to manage, sustain and grow their wealth across multiple generations. Michaela's Zesty Pumpkin Soup (served at Pie Day):

Ingredients:

  • 1/4 cup butter
  • 1 cup chopped onion
  • 1 garlic clove, chopped
  • 2 teaspoon curry powder
  • 1 teaspoon salt
  • 1/3 teaspoon coriander
  • 3 cups of chicken broth
  • 1 can (16oz) pumpkin (not pie mix)
  • 1 cup half & half   

Sauté the onion and garlic in butter for 5-10 minutes. Add the curry, salt and coriander and stir for 1 minute. Add the chicken broth and bring to a gentle boil. Let simmer for 20 minutes uncovered on medium heat. Add the pumpkin and the half and half. Cook 5 minutes more.

  • Allspice berries
  • Whole nutmeg
  • Star anise
