Heather joined the Beacon team in August and she brings over 14 years of experience in the financial services industry. Michaela's Zesty Pumpkin Soup (served at Pie Day):


  • 1/4 cup butter
  • 1 cup chopped onion
  • 1 garlic clove, chopped
  • 2 teaspoon curry powder
  • 1 teaspoon salt
  • 1/3 teaspoon coriander
  • 3 cups of chicken broth
  • 1 can (16oz) pumpkin (not pie mix)
  • 1 cup half & half   

Sauté the onion and garlic in butter for 5-10 minutes. Add the curry, salt and coriander and stir for 1 minute. Add the chicken broth and bring to a gentle boil. Let simmer for 20 minutes uncovered on medium heat. Add the pumpkin and the half and half. Cook 5 minutes more.
